冰岛山羊肉Icelandic mountain lamb

冰岛禁止在牲畜中使用激素,每年春天都会有成群的山羊,羔羊在山上的草原漫游。冰岛的山羊肉世界闻名,到冰岛来的话一定不要错过。

传统山羊肉料理(本人未下过厨,佐料就不翻译了,免得贻笑大方)

  • Bjúgu – smoked sausage
  • Hangikjöt – Icelandic smoked lamb, once daily fare, now mostly eaten during Christmas and other holidays, served with potatoes in white sauce with green peas, on rye pancakes or with pickled red cabbage. Raw Hangikjot is boiled in unsalted water at a low heat for about one and a half hours
  • Lifrarpylsa – Icelandic style haggis
  • Saltkjöt – salted lamb/ mutton
  • Slátur – blood and liver puddings made with meal, suet and spices sewn in sheep stomachs
  • Svið – singed sheep’s head
